I don't have a lot of strength in my wrists and find it difficult to lift saucepans (especially when full with food) off of the cooker hob.

You probably already know this but Aluminum in the lightest materials used for pots and pans. It's relatively inexpensive and a good conductor of heat. Cast Iron, Copper, Stainless Steel, Ceramic are all pretty heavy. Food weight can't be changed so you can try aluminum to lighten your load or modify your cooking set up for more leverage.
