I have been trying to find something that will hold a potato or vegetable still on a work surface so I could peel it but so far have not been able to find anything like this, hope some one has one of these.

You might find it useful to look for chopping boards that have a number of spikes embedded into the surface, which can be used to hold vegetables and other food items in place while you peel or chop them. Here’s an example here: http://www.abilityanswers.com/beechwood-cutting-board-with-spikes-p-1680.html and here: http://www.amazon.co.uk/Swereco-One-handed-cutting-Board/dp/B0059F528G Hope this helps! : )
You got there before me, Denise
Just what the OT would recommend! I’ve also just found this ‘Food Preparation Station’, hadn’t seen anything like it before: http://www.completecareshop.co.uk/disability-elderly-aid/1136/etac_food_preparation_system.html
